Oh the holiday season – spending time with the family and enjoying the cold weather. <3 Ha, ok – not everyone is enjoying the cold weather but this recipe is perfect when it is chilly out! Just pair with a nice glass of wine, family and a cozy fire and you have yourself one heck of a lovely evening (at least in my book). 😛
I am home at my parent’s house in Arkansas for the holidays and wanted to make my family a new recipe. Now I have been practicing perfecting this dish in my little apartment in Atlanta and man… all that meddling has paid off! Plus, it was an added holiday bonus getting to cook this winter weather chicken in my mom’s beautiful kitchen!
Warm cinnamon chicken immersed in a delicious wine tomato sauce served on a bed of white rice. Now doesn’t that sound like something you would want to eat by a fire?? I just wish it was snowing outside to make this winter meal complete!
- 1 Cup Rice
- 1 Tablespoon Olive Oil
- 2 Cups Water
- 4 Tablespoon Butter
- Boneless Skinless Chicken Breast
- 2 Tablespoons Cinnamon
- 1 Tablespoon Cumin
- Salt and Pepper to Taste
- 2 Tablespoon Butter
- 1 Tablespoon Olive Oil
- 1 Yellow Medium
- 4 Cloves of Garlic
- ¼ Cup Red Wine
- 15 oz Tomato Sauce
- 15 oz Diced Tomatos - Well drained
- Salt and Pepper to Taste
- Put rice, water and a touch of olive oil in a pot over medium heat. Cook until tender and when all of the liquid is absorbed.
- Warm a skillet (suggested: iron skillet) on medium heat and melt butter. Add in chicken. While chicken is browning add cinnamon, cumin, salt and pepper. Cook until brown on both sides (8-10 minutes) and set to the side.
- While the chicken is browning start chopping your onion and garlic.
- Once chicken is removed add in the onions and garlic and allow the onions to turn translucent (~5 minutes) into the same skillet. Make sure not to burn the garlic.
- Then pour in the wine and give it about 2 minutes to get rid of the alcohol and soak into the onions.
- Add in the tomato sauce and drained diced tomatoes. Bring to a boil.
- Add the chicken back into the skillet and let simmer till cooked fully (no pink in the center). Let simmer on low heat for at least 10 minutes then serve over the rice.
- Enjoy!

All the seasoning you will need!
Melt the butter, let chicken brown and add seasoning.
Start chopping your onions and garlic.
Set chicken to the side once brown.
Ohh that yummy sauce!
Put the chicken back in and simmer it down. 😛
Now just add family and a warm fire.
