It’s been a few years since the last blog post, life happens you know.. got married, moved to a new house, been focused on settling into the life changes and of course my real job. All good things but I am ready to jump back into the blog and provide great recipes for you all!
Today we are going to make gluten free scones with currants! These are the perfect weekend baking treat and you will never know that the real flour is missing! Plus in place of sugar this uses honey and maple syrup.
My husband doesn’t like very many sweets, but he LOVES scones. I started working on perfecting this recipe earlier this year when we were doing keto. No.. we didn’t count carbs, we were just more aware of what we were eating and tried to cut out carbs out of meals where we could.
Now, let’s get to baking! Combine all your dry ingredients and then wet in a deep bowl. When well combined, shape dough into square or rectangle about a half inch in height.
I didn’t do a very good job cutting these in perfect triangles but I like the character it brings 🙂 You can do any shape you’d like but I find triangles are easiest for me.
Time to butter these beauties up and get into the 350 degree oven!

- 2 cup almond flour
- 4 tablespoons coconut flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup maple syrup
- 1 tablespoon honey
- 1 egg
- ⅓ cup almond milk
- 4 tablespoons of butter melted (plus an extra 2 tablespoons)
- ⅓ cup of currants
- Preheat oven at 350 degrees
- Add flour, baking soda and salt to deep bowl and stir together with whisk
- Add other ingredients and stir. Hand mixer or spatula will work
- Pack into one big square/ rectangle on floured surface or stick proof mat.
- Cut into triangles or which ever shape you like. I find triangles are the easiest for me.
- Add additional 2 tablespoons of melted butter on top before they go into the oven
- Bake in oven for 18 minutes on greased baking sheet
